This variety is actually a green tea, although the dark leaf color suggests otherwise. After steaming, which is characteristically performed on green tea in Japan, the leaves are roasted. This gives them their dark, brown color and less caffeine and acidity. The infusion results in a fantastic mild taste, which has a sweet, nutty note. The roasted tea leaves are neither smoky nor harsh. The tea tastes full-bodied and unique, as it differs significantly from the taste of other Japanese teas. This strain is often drunk to eat and goes well with Asian food.
