Quiche with herbs & tea

For the short pastry cut the cold butter in pieces, put salt, flour and 2 eggs into it and knead it to a dough. Roll out the dough on a flour covered table and put it into a round or angular baking tin. Use a fork to poke some holes in the dough.

For the filling wash the herbs and cut them into fine pieces. Chop the onions and garlic and fry them in a pan with the olive oil. Mix the herbs with the onions and garlic and put the loose tea leaves* into the dough. Blend the sour cream with the eggs and refine it with salz and pepper. Pour it through the mixture and sprinkle with spicy grated cheese.

 Bake the Quiche in the preheated oven at 175°C for 45 minutes. (Recipe by CookingCatrin)

*Suitable for the quiche is White Tea, like “Bio Pai Mu Tan White” , which makes a fresh and tart taste or use alternatively fruity Green Tea, like the variety “Fresh Green“, which is refined with Cranberries, raspberry and strawberry pieces and therefore a refreshing and fruity note create.

For a bake tin with 40 x 20cm:

  • For the dough:
  • 250g flour
  • 120g butter
  • 1,5tsp salt
  • 2 eggs
  • For the filling:
  • 2 bunches of herbs
  • 2 tbsp White Tea
  • Alternative: Green Tea
  • 3 spring onions
  • 2 tbsp olive oil
  • 2 garlic cloves
  • 4 eggs (size M)
  • 350g sour cream
  • 100g spicy cheese
  • Salt
  • Pepper
