Rooibos Pumpkin Soup
Cut the pumpkin, potatoes and onion in small slices and roast it gently in a cettle with few oil. Put hot Rooibos tea into it and simmer it on low heat as long as the vegetables are soft. Put the orangejuice into it and puree it. Mix it with Creme Fraiche and flavour it with salt, pepper, nutmeg, chili and ginger!
For 6 portions you need:
- 1kg pumpkin
- 300g potatoes
- 1 onion
- Ginger Spice
- 1l BIO Rooibos Tea
- 200ml orangejuice
- 1 Creme Fraiche
- Salt & pepper
- Nutmeg
- Chili powder
