Red Clover Iced Tea with Fruit Blend

Shake out the freshly picked red clover blossoms, wash the lemons and slice them. Put both together with water, coconut sugar and citric acid powder in a saucepan and bring to a boil.

Simmer the syrup for 45-50 minutes over low heat and pour through a strainer to remove the flowers and lemon slices. Fill a tea filter with plenty of organic Mild Berry fruit infusion and hang it into the syrup. Put it into the fridge overnight.

Infuse the cold syrup (on the next day) with some sparkling water and/or sparkling wine (amount as you like) and garnish with fresh red clover. (Recipe and photo by Lisa Shelton from www.kochmitherz.com)

Ingredients for the Red Clover Syrup:

  • 4-5 hadnful Red Clover
  • 2 organic lemons
  • 1l water
  • 1teasp. citric acid
  • 400g coconut sugar

Ingredients for the iced tea:
