Cream butter with a pinch of salt and 300g caster sugar. Slowly add egg yolks and lemon and orange zest. Whisk egg whites with remaining sugar. Alternately fold egg whites and flour into egg yolk mixture. Fill in a buttered and floured baking pan and bake at 180°C for 1 hour.

You need:

  • 500 g butter
  • 500 g caster sugar
  • 650 g flour
  • 12 eggs
  • Zest of 1 lemon and 1 orange (organic)
  • Pinch of salt
